First Dinner Back Home

There is nothing better than a home cooked meal by your mom, especially when you’ve been out of the country for a few months. Last week before returning home, I asked my mom if she would cook one of my favorite meals that she makes: baked chicken with broccoli and rice casserole with sweet potato pie for dessert.

My mom, per usual, did not disappoint.

When I bit into this meal, I could tell that it was truly made with love. The baked chicken was seasoned very well. And the broccoli and rice casserole was cheesy and full of broccoli just like I like it. This meal was only surpassed in flavor by my mom’s sweet potato pie.



Sweet Potato Pie

My mom makes the best sweet potato pie. Now I know everyone thinks that their mom makes the best of whatever their moms’ specialty is but no ones sweet potato pie beats my mom’s.

She begins her pies with home made crust from scratch and then with the delicious filling (secret recipe, of course).

Sweet potato pie, is my favorite winter time dessert. So I have tried many sweet potato pies over the years, all of which have failed in comparison to my mom’s. Which is probably the reason that family and friends every holiday season continuously ask my mom to make them pie after pie.

The only pie that might be able to contend against my mom’s pie is Patti LaBelle’s Sweet Potato Pie. I have not tried this pie yet, but I plan on to see if it can hold a feather to my mom’s.
